Port Rice Pudding recipe

Taking a nod from Portuguese cuisine, here’s a rice pudding recipe that contains port-soaked raisins. It’s got a spiced richness and smooth consistency—hard to resist.

Ingredients:

5 cups whole milk
¾ cup white rice
3 tablespoons butter
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
2 cups sweetened condensed milk
½ cup raisins, soaked in ¼ cup port
2 tablespoons orange zest

Directions:

1) Combine milk, rice, butter, cinnamon, and cloves in a medium saucepan. Bring to a boil over high heat; reduce to a simmer and cook until rice is very soft, stirring occasionally, about 1 hour.

2) Add condensed milk, raisins, and zest to rice mixture; simmer until very thick and creamy, stirring occasionally, about 10 minutes. Serve warm or chilled.
