Jamaican Spiced Rice Pudding recipe

Like their other regional dishes, Jamaican rice pudding is thick, creamy, and laden with sweet spices and coconuts. You’ll drift hazily to the tropics while enjoying this rich dessert.

Ingredients:

5 cups whole milk
½ cup white rice
1/3 cup packed dark brown sugar
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 cup coconut milk
¼ cup unsweetened shredded coconut
¼ cup raisins

Directions:

1) Combine milk, rice, sugar, cinnamon, cardamom, cloves, and nutmeg in a medium saucepan; bring to a boil over high heat. Reduce to a simmer and cook until rice is very soft and liquid is almost reduced, stirring occasionally, about 1 hour.

2) Add coconut milk, coconut, and raisins to rice mixture; simmer an additional 10 minutes, stirring frequently. Serve warm or chilled.
