German Rice Pudding with Applesauce and Cherries recipe

Often served during Christmastime and other holidays, the German-style rice pudding is rich with fruity sweetness.

Ingredients:

4 cups whole milk
½ cup sugar
½ cup white rice
2 tablespoons butter
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
1 cup applesauce, for serving
Sauce:
1 cup pitted cherries
¼ cup sugar
2 tablespoons lemon juice
1 teaspoon cornstarch mixed with 2 tablespoons water

Directions:

1) Combine milk, sugar, rice, butter, vanilla, and cinnamon in a medium saucepan; bring to a boil over high heat. Reduce to a simmer and cook until rice is very soft, stirring occasionally, about 30 minutes. Remove from heat.

2) Meanwhile, prepare the sauce: Heat cherries, sugar, and lemon juice in a small saucepan over medium-high. Bring to a boil and simmer until thickened, stirring, about 5 minutes. Stir in cornstarch and cook until just thickened, about 2 minutes. Remove from heat.

3) Chill rice pudding and sauce at least 3 hours. To serve, scoop pudding into serving cups; top with applesauce and cherry sauce.
