Costa Rican Rice Pudding with Orange and Cloves recipe

Costa Rican rice pudding is a bit like Costa Rican coffee blends—bright, airy, and spiced with citrus notes. Superbly refreshing.

Ingredients:

5 cups whole milk
¾ cup white rice
3 tablespoons butter
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
2 cups sweetened condensed milk
1 tablespoon minced orange zest

Directions:

1) Combine milk, rice, butter, cinnamon, and cloves in a medium saucepan. Bring to a boil over high heat; reduce to a simmer and cook until rice is very soft, stirring occasionally, about 1 hour.

2) Add condensed milk and zest to rice mixture; simmer until very thick and creamy, stirring occasionally, about 10 minutes. Serve warm or chilled.
